This pizza is not your traditional pizza with tomato sauce and cheese on a pizza dough. This might become my new favorite pizza and that is saying something. I tossed out the classic pizza dough and replaced it with Naan bread. If you have never had Naan bread it is amazing! Makes great gyros, tastes great dipped in hummus and slice it up for a salad topping. This bread can do no wrong.
Next thing I change is the traditional pizza sauce. I got rid of it completely. This has no sauce!! I know how can it be called a pizza if it doesn’t have sauce. Well, the word pizza is Italian for pie, but how that word wound up in Italian boggles etymologists. It may have come from the Latin pix meaning “pitch” or Greek pitta, but others say that it originated in a Langobardic word bizzo meaning “bite,” thank you, Dictionary.com. So this is why I call it a pizza, cause you are going to want to take bite after bite once you try it. And I did have a sauce it was a homemade Greek salad dressing, just not tomato base.
Now for the cheese. I didn’t change much. I kept the mozzarella melted a little on the Naan bread while it was crisping up and chopped some up small to top the spring mix. Which is something I added. The blend of different lettuces give us some different textures and a pop of freshness.
Just be happy there is no pineapple on this. But I did added some greek style grilled chicken to top the pizza. OMG! I don’t know if I can eat chicken any other way again. It was packed with flavor, tender and juicy. I just want more. And to make this pizza even more amazing, I drizzled some homemade Greek dressing over everything! Just talking about is making me hungry again.
- 1/3 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 tbs fresh lemon juice
- 1 clove garlic, minced
- 1 tsp brown mustard
- 1 tbs fresh chopped oregano
- salt & pepper, to taste
- 3 Naan Bread
- 1/2 lbs boneless, skinless chicken breast
- 8 ounces mozzarella, cut into chunks
- 4 cups spring mix
Preheat the oven to 400˚F.
In a small bowl combine, olive oil, brown mustard, red wine vinegar, garlic, oregano, lemon juice and salt & pepper. Wish until well combined.
Place Naan bread on cookie sheet. Place in oven and bake for 10 minutes. Remove from oven and flip over. Top with 1/2 of the cheese and put back in oven. Cooke for another 10 minutes or until crispy.
Spray a large skillet with non stick spray. Add chicken. Salt and pepper to taste. Cook for 5 minutes. Add 3 teaspoons of homemade greek dressing. Continue cooking until no longer pink inside.
Remove Naan bread from oven. Cut in half short ways. Top with spring mix, cooked chicken, mozzarella cheese and a couple of teaspoons of dressing.
