My husband says this reminds him of me, a little spicy mixed with sweetness. I don’t know if I want to remind him of a food. Hmmm. If you love those rotisserie chickens you can buy at the store, then you are going to love this! Not only is it juicy and tender, it is packed with flavor!! I am all about the flavor.
This recipe is great any time of the week, whether on one of those lazy Sundays when you are hanging around the house all day or in the middle of the week after a long day at work. You may be asking yourself: How is that last one even possible if it takes a long time to cook? The answer is a slow cooker. Just make sure your slow cooker can reach the appropriate cooking temperature. You don’t want people to get sick.
If you have leftovers, and that is a big if, you can use it to make a taco chicken soup. Simply add chicken broth, tomatoes, beans and vegetables. Dinner is done in 10 minutes. Your hungry kids will look at you like you are a rockstar and eat their vegetables. Sneaky, I know.
- 1 fryer chicken
- 2 tbs extra virgin olive oil
- 1 tbs salt
- 1 tbs ground pepper
- 2 ts minced garlic
- 2 ts minced onion
- 1/2 ts cayenne
- 5 tbs packed brown sugar
Preheat oven to 300˚F.
Using a sharp knife butterfly the whole chicken. Place on a broiler pan, skin side up. Gently pull the skin away from the chicken meat.
In a small bowl combine paprika, salt, pepper, onion, garlic, cayenne and brown sugar. Mix with a fork until well combined.
Gentle life skin from chicken and rub the dry mixture in. Drizzle 1-2 tablespoons over chicken skin. Add more of the dry rub on top of the chicken.
Place chicken in oven and cook for 3-4 hours or until juices run clear.
You could do this in a slow cooker. Just make sure that your slow cooker reaches to 300 degrees.
