This was a game changer. I love my original version with cheese and bacon. I mean bacon. But I wanted something lighter and just a little healthier.
This was a huge hit with the family, and I was lucky enough that they saved me a bite to try it. I’m not kidding! I couldn’t even get a full sandwich. They ate almost everything! They did graciously leave me enough for a half sandwich.
I love the sweet-tart combination from the cranberries and the crunch from the apples and walnuts. The flaky croissants would have been a nice touch if they had saved me any. No, I am not annoyed about that. J I am just glad that I can trick them into eating a little healthier without them noticing. Did I mention there is only two steps in making this. So easy kids can make it!!
- 1 12.5 can chicken
- 1 Granny smith apple diced
- 1 cup dried cranberries
- ½ chopped walnuts
- 2 tablespoons mayonnaise
- 2 tablespoons Greek yogurt
- 1 teaspoon deli mustard
- salt and pepper to taste
- 4 large croissants
In a medium sized bowl combine the can chicken, apples, mayonnaise, mustard, walnuts, Greek yogurt, and cranberries. Salt and pepper to taste.
Using a sharp knife cut the croissants in half. Fold open and fill with the chicken salad.
