If you have growing kids you know they will eat everything and anything that is not tied down. If you kids are not to that age, let me be your canary in the coal mine: when they start growing, they eat everything!!
We are not out of the cold weather yet and they wanted to spend the day at the Mardi Gras parades. We need something that would be inexpensive to make but feed an army. And that is when I decided baked oatmeal was the perfect meal. The best thing is that it is packed with fiber, protein, fruit, and best of all, it warms you up from the inside out. Prefect for those cold mornings when you are going to be outside. It even makes a great after school snack. Just warm it up with a little more milk.
- 2 1/3 cups Old Fashion Rolled Oats
- 1 tsp baking powder
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 large eggs
- 2 cups milk
- 1/4 cup butter melted
- 1/4 cup packed brown sugar
- 1/2 tsp vanilla extract
- 2 crisp peeled and cored 1/2-inch diced sweet apples
- 3/4 cup hopped walnuts optional
- 1/2 cup dried raisins
Preheat oven to 350˚F degrees. Grease a 9×9-inch or 2 quart casserole dish.
In a medium mixing bowl whisk together oats, baking powder, salt, cinnamon and nutmeg.
In a separate large mixing bowl whisk together eggs until well blended. Mix in milk, melted butter, brown sugar and vanilla.
Add oat mixture to milk mixture along with apples, walnuts and about 2/3 of the cranberries and stir well.
Pour mixture into prepared baking dish. Sprinkle remaining 1/3 of the cranberries over the top.
Bake in preheated oven until set, about 30-45 minutes. Serve warm.
